Kaltouma, originally from Sudan, has lived in Shieldfield with her family for many years. She learned how to cook falafel from her mam who ran a small restaurant in Medina. Her recipe is packed with bold North African spices. Kaltouma cooks falafel regularly at Shieldfield’s Forum Cafe for Big River Bakery “home of the stottie”.

As a Dwellbeing Community Chef, Kaltouma also runs cooking workshops, provides catering, and hosts free community meals in Shieldfield.
£1.04 from each Falafel Fusion Stottie sold at Big River Bakery goes straight back into the Dwellbeing Community Chefs pot to fund resident-led cooking activities which build skills, knowledge, confidence and good relationships in our neighbourhood. With each tasty, plant-powered bite, you are supporting a ‘solidarity economy’ through which we meet needs in our Shieldfield community.
